ORANGE CAKE

1 package bloomfoods whole grain baking mix
1/2 cup sugar
1/2 cup plain low fat Greek yogurt
2 eggs
2 clementine oranges
1/2 cup oil

Measure sugar into a bowl; grate zest of oranges into sugar and set oranges aside. Using clean hands, rub zest into sugar.

Peel oranges and gently remove fruit sections from the skin/pith (a sharp knife makes this easier). Set sections on paper towel to dry.  (Note: if you are short on time, you can substitute 1 cup of mandarin orange slices, drained and allowed to dry on paper towels.)

Beat eggs and yogurt into sugar mixture. Stir in pancake mix until batter is smooth. With a rubber spatula, slowly fold in oil a little at a time until the batter is smooth and shiny.

Pour into greased large loaf pan or 9×9 baking pan. Scatter orange segments on top.

Bake at 350 degrees until cake is golden brown and pulling away from the sides (about 40 minutes for the 9×9 and 50 minutes for the loaf). Allow to cool for 5 minutes before removing from pan.
