CRANBERRY-WALNUT SCONES

1 package bloomfoods whole grain baking mix

1/4 cup sugar

1/4 cup fresh or frozen cranberries, quartered

1/4 cup chopped walnuts

1/2 cup oil

1/2 cup nonfat plain Greek yogurt

1 egg

Dash of flour for shaping

Preheat oven to 400 degrees

In a large mixing bowl, empty pancake mix and add sugar, walnuts, and cranberries. Stir to mix.

Add oil and stir/mix thoroughly with a fork until combined.

In a separate bowl, mix yogurt and egg together; pour into dough mixture and stir until well mixed.

Dump onto floured board and knead a few times. Form a loaf and cut in half with a sharp knife.

Gently, one at a time, roll each half into a log approximately 12″ long, and flatten slightly. With a sharp knife, cut each log into 12 pieces.

Place on greased cookie sheet. Bake 15 minutes. Cool on wire rack and store in air-tight container. Makes 2 dozen.
