1 package bloomfoods whole grain baking mix
1/2 cup coconut oil
1/4 cup brown sugar
2 eggs
1/4 cup chopped walnuts
1/4 cup shredded coconut
1/4 cup raisins

Preheat oven to 375 degrees.

In a large mixing bowl cream together oil and sugar. Add eggs and mix well. Stir in coconut, walnuts and raisins. Fold in pancake mix a little at a time until it is all incorporated. Drop by spoonful onto greased  cookie sheet. Bake for 12 to 14 minutes. Makes 3 dozen cookies
Each cookie:  100 calories, 2.5g sugar, 7g fat, 1g fiber, 1g protein
