1 package bloomfoods whole grain baking mix
1 stick of butter, softened
1 tablespoon coconut oil (or other oil)
1/2 cup sugar
2 eggs
10oz dark chocolate chips*
1/4 cup chopped walnuts (optional)

In a medium bowl beat eggs, oil and butter together until smooth. Slowly add the sugar and whip until thoroughly incorporated.
Stir in pancake mix a little at a time. Stir until smooth. Add chocolate chips and nuts and stir.
Drop by teaspoonfuls onto cookie sheet.
Bake at 375 for 12-15 minutes
Makes 3 dozen.

  • look for chips with no artificial ingredients. Many high end chips have none, but even our store brand had no artificial colors or flavors — unlike many chocolate candies – even dark chocolate varieties.
