1 package bloomfoods whole grain baking mix
1 T ground cinnamon
2 T sugar
1/2 cup oil
2 eggs
1/4 cup nonfat plain Greek yogurt
4 medium apples

Preheat oven to 400 degrees.
Wash apples; cut into 1 inch chunks and set aside.
In a large bowl, stir together pancake mix, cinnamon, and sugar.
In a separate bowl, combine eggs, oil and yogurt. Mix well.
Add egg mixture to dry mixture. Stir thoroughly.
Add apples (and 1/2 cup chopped walnuts &/or raisins if desired), stir. Mixture will be lumpy and somewhat dry.
Dump mixture into greased 9×13 baking dish.
Bake for 35 minutes.
