1. Pour contents of bloomfoods Pancake Mix into a large bowl and stir with a fork a few times. Finish by making a ‘well’ in the middle of the mix.
2. In a small bowl, mix 2 eggs and 1 ½ cups of water (or milk for a richer pancake). Or, for vegan pancakes use 1 1/2 cups water and 1 T oil in place of the eggs. Beat well.
3. Pour wet ingredients into ‘well’ of dry ingredients. Stir with a fork until moistened. It is best if it is a little lumpy!
4. Bake on a lightly greased hot griddle or pan. For best results, turn when the tops start to bubble a bit; adjusting the heat so that pancakes do not burn.
